I have used this recipe for many years and I am always tasting others to see if they can compare....haven't found one yet!
Ingredients:
1 Single pie crust recipe -found here
3 slightly beaten eggs
1 C. Corn syrup
1 C. Sugar
1/3 C. butter, melted
1 tsp. vanilla
1 1/4 C. pecans finely chopped with some larger chunks as desired and leaving enough whole to decorate
(I use 2 cups pecans with 1/2-3/4c. in larger chunks ;-) )

Heat oven to 350 degrees F.
Prepare and roll out pie crust, place in pan and shape as desired.
For Filling:
Combine eggs, corn syrup, sugar, butter, and vanilla. Mix well; stir in pecans.
Pour filling into pie crust and place whole pecans around as desired.
To prevent over-browning, cover edge of the pie with foil or a pie crust protector. Bake for 25 minutes then remove protector, bake for 20-30 minutes more...until the middle of the pie starts showing a crack...that is a good sign that the filling is done and it will gel well.
Cool then place in refrigerator within 2 hours.
So SOOOO Yummy!!! Don't forget a scoop of vanilla ice cream to serve! Enjoy! Happy Thanksgiving!
